Heirloom Frosting And Fruit. Do They Mix?

AMy cousin's wedding is coming up this Saturday. She wanted cassata cake, but doesn't like the custard filling. She likes fluffy whipped frosting.

My original thought was to do heirloom frosting and put the little chopped up strawberries in that for the filling.

However, my mind went back to many moons ago when I mixed strawberries in with buttercream, along with some strawberry jam. Shortly after I got the cake filled and iced, a nightmare of mascerated strawberry juice kept pouring out of a teensy hole in my icing. My cake was BLEEDING!

I think it was the sugar in the jam mixed with the strawberries that caused the problem. I mix preserves in with icing all the time...no problem.

Would the bleeding occur if it was chopped strawberries alone in icing? I can't recall just adding fresh fruit to any icing, only to the custard for the cassata cake.

So my question is, does anyone know if fresh strawberries could be added to heirloom frosting without the bleeding?

AI don't think it would happen if you just added chopped strawberries. Dry them a bit with a paper towel if you must. I know some people make a SMBC and add in chopped strawberries for a filling and it does just fine.
