run a spatula through it before it crusts---easier than smoothing---these are money makers because they involve little time compared to others

That doesn't look like piping to me.  That looks like a version of rustic buttercream made by going over & over it with a knife or a spatula as it spins on a turntable.  That's my best guess!

AMy first wedding cake looked like this. I whipped air into the buttercream to increase the texture. Then after coating the cake, rotated the turntable while dragging a narrow spatula (or whatever works, spoon, etc.) and moving the contact point to obtain random streaks. That's the hard part. Making it look random and artistic without having starting and ending marks that line up. If you work the icing too much, you will start to lose some of the texture created by the air. Good luck!
