AI just made wilton buttercream and unfortunately we hate the taste it was too sweet and greesy even with 2 tbs of lemon juice and a pinch of salt added.i have made some gumpaste roses and my question is: is there anything else exept fondant and ofcourse bc that I can put my flowers on without melting?something like sweet heavy whipped cream?

Look up a recipe for Italian Meringue Buttercream.  You'll be pleased.  A lot more effort, but worth it.  Has the mouth feel of a sweetened whipped cream, but is more stable.  And if your gumpaste roses were fully cured, there's not much that could "melt" them.  Maybe change your gumpaste source?

AI don't think whipped cream is sturdy enough to hold fondant. You wouldn't get a nice looking fondant cake. You might like Swiss meringue buttercream. It's less sweet and works great under fondant.
