Hi Everyone I'm going to be opening a desserts business in a couple of days and was wondering what are some of the forms you use to help make it easier on yourself and if you have templates for them! I'm stressing out a little but I know I would like to record how many things I have on hand and also what I put in the case and when it was put in there, as well and waste and thrown away, etc etc anything you guys can give me will be so appreciated! First a few questions: You're opening a primarily take-out or eat-in business? How many display cases? And will you be there all the time or will employees be handling customer requests?

It will be both- eat-in and take out. There is only one display case for now it's a 4 foot half cold half dry.  And starting off it is going to be just me handing everything.

I'm going into business with an establish coffee shop that has been around for 6 years, they approached me and wanted my business to join in their establishment, kind of like a food court in a mall but only 2 businesses. So she already has a great clientele and a dining room area.

Since you will be the only person handling these products, you will probably have a good sense of what does and does not sell. To track freshness, create an inventory list with date, product name, and approx time it was placed in case. Keep another list of products that didn't sell. For your lists, use paper, computer, tablet, phone, or whatever you feel comfortable using. The biggest problem will be remembering to do this.

How do you come up with labor cost on cupcakes and cakes?  Any info would be appreciated!
