Good morning :)

 

I am not an experienced baker, although I am working on it, and have promised my Dad that I will make him a Lemon Meringue Pie next time he visits (which is soon).

 

I've never made one before and have found a gazillion recipes online.....how do you choose??

 

Wondering if anyone has a recipe they can recommend and/or share. I'd much prefer to try one that I know has worked for someone, than take a guess and choose a dud. He won't go for anything 'fancied up', no nutty crust etc, just a standard old Lemon Meringue Pie (bit boring, I know, but a promise is a promise)

 

Have done some searching for tips also and it seems the general rule is to add the meringue while the filling is still a bit warm...(?) Anything else I should know?

APaul hollywoods recipe is amazing. No fancy stuff just good ingredients a shed load of calories and a few moments in heaven whilst you eat it.

I found the recipe online here but I can tell you he does not advocate packet pastry in his book but it would work.
