Make A Cake Cool Faster?

Hello!

I am in cake-you-know-what....I have to decorate 3 cakes tonite and 1 still needs to be baked. Is there any way to make the cakes cool faster? I am afraid to put them in the fridge in case they begin to 'sweat', you know, build up condensation. As it is I have 2, 11X15 cakes that are still warm to the touch so I can't do anything at the moment. I need to carve these into a pyramid.

Any ideas or suggestions?

It's gonna be another late nite....

I recommend putting them under a fan.

Take a stand fan and turn it on them (make sure the fan blades are clean so that you don't blow dust on them)...and then invest in granite countertops ???..if I had a house and the money I would love to have granite countertops, my dad and step-ma have them and she says things cool down very fast when she sets hot items on the countertop.

I have a fan...but its buried in the garage!!! And I would love granite countertops but I'd have to sell a heckuva lotta cakes to pay for that!

Just these 3 more cakes and i'm done for the week...so close....

Anytime you have to carve, it is best to freeze your cakes. Then just carve, then let them come to room temp after you crumb coat.

I usually stick mine in the freezer if I need to cool it quickly. I'd be leary of putting a fan on it, because I would be afraid of it drying it out.

Also torting your cake will help cool it faster.
