Uk Bakers Please Help...lemon Drizzle ?
Baking By SandraDee73 Updated 24 Apr 2014 , 7:04am by catsmum
My cousin and her children are from the UK and will be staying with me this week. We're planning on having Easter Sunday dinner with other family. Her birthday is this weekend as well. I'd like to bake her a cake and make it pretty for her birthday, as well as have it appropriate for Easter. When I asked her son if he could give me some flavor ideas he came back with "Cherry Cake, Lemon Drizzle and white chocolate (When asked if it was a flavour or filling she just replied with both)" I've never heard of either the cherry cake or lemon drizzle. I'd like to go for the lemon drizzle but a) I don't have a clue how to make it b) what do I use for a filling (if a filling is appropriate) and c) do you ice this thing and decorate as you wish (seems like maybe not if it's a "drizzle"? Any pointers would be great! Thanks in advance!
Hiya,
I LURVEEEE Lemon drizzle cake. It's normally a loaf shaped zesty cake which a simple sweet glaze drizzled on top.
I use my own recipe but don't have it at hand. However I used Ina Garten's recipe when I first made this http://www.foodnetwork.com/recipes/ina-garten/lemon-cake-recipe.html but I halved it as it makes two loaves and also you may want to cut down on the amount of lemon juice as it can be too strong for some.
All the best :)
Ohhhh that Lemon cake recipe looks delicious. Actually she says to bake it in bread pans, so I know it'll bake up nicely. This is something that I've been looking for. Thanks for sharing the link.
Thank you WhitePeony! I was searching all day and came across that exact recipe you shared the link for. I'm going to try that one, use two 8" cake pans, fill with lemon curd and cover with IMBC. I want to make it sort of look like a birthday cake instead of a loaf. I've never made either the cake or the IMBC so I'm excited to see how it all turns out.
She is the cake queen here in the uk and her lemon drizzle is famous. the recipe on her website is a traybake but these quantitys would adapt to an 8" round cake tin I use a zesty lemoncurd and buttercream for my filling.
AYou bake it in a tray shaped baking tin. I find you need to reduce the amount of lemon in the drizzle. It's way too strong otherwise.
AMary Berry for me, lovely as is but delicious made in sandwich tins with buttercream. You could easily decorate it like a birthday cake then.
AA tray bake is your equivalent of a sheet cake. We serve it cut into squares. Usually just has buttercream/choc or other "frosting" on top as it isn't usually split and filled. I actually like the lemony drizzle especially if you are going to split or sandwich it with lemon curd and buttercream.
Ah yes, like a sheet cake. That would certainly allow the lemon sugar sauce to be absorbed better into the cake, than using a taller bread-loaf pan. It sounds wonderful.
Well I used Mary Berry's lemon drizzle recipe (no drizzle) along with a lemon curd filling and IMBC with a bit of lemon curd for flavor and it turned out WONDERFULLY!! It was a bit hit and I will definitely be keeping this in my rotation!
