Hello friends,

i want to take help of masters in cake present here at this website.

My twins birthday is coming in 2 months n i have planned to do a Dora n Diego cake for them.

 

i have almost 40 guests.

i m planning to do two 8.5" round cakes(each 2.5" high), each having 2 layers means total 4 layers cake of 5" height.

 

i love to do a 2 tier cake(8" n 5") but i m afraid of that, as i haven't done tiered cake before, n heard a lot of disasters from others that it usually sinks from middle, difficult to handle.

 

my problems r:

 

1- how soon should i bake my cakes?

2- what should be perfect icing for filling in the layers, it will b month of June, quite hot here.

3- When should i apply fondant layer?

4- how soon should i ready my fondant characters (Dora,Diego,Boots)?

5- when i finished my decoration on cake( which i've planned to do a day before), should i leave it at room temperature or what?

6- what should be amount of fondant require to cover this much cake?

7- n yes very important, what type of cake should i bake to cover with fondant??

 

plz help friends, its really urgent n important too :(

AI have found that this website has great feedback. Do a search for any of your questions and there is probably already a thread that has them answered.

Youtube has great how-to videos, too.

I would suggest making practice cakes between now and the party. Anything small that will give you practice.

I am not a "master in cake", just a hobby baker, but I will give your questions a try!  I've added my answers in italics below:

1- how soon should i bake my cakes?   Can be baked ahead if you can freeze well wrapped.  Otherwise, bake on Wednesday for Saturday.

 

2- what should be perfect icing for filling in the layers, it will b month of June, quite hot here.  Indoors or outdoors?  Indoors, any icing will work.  Outdoors, in heat, you might want to use one of the recipes like IndyDeby's or Sugarshack's that use shortening instead of butter.

 

3- When should i apply fondant layer?  Bake (or defrost), fill, let settle for several hours or overnight, then apply fondant.  So if you bake and fill on Wednesday morning, fondant on Wednesday evening or Thursday.

 

4- how soon should i ready my fondant characters (Dora,Diego,Boots)?  Those can be made well ahead, and stored in a cool, out-of-sun place.

 

5- when i finished my decoration on cake( which i've planned to do a day before), should i leave it at room temperature or what?  Yes, that's what I would do.  

6- what should be amount of fondant require to cover this much cake?  There are charts available with this information.  Check the Satin Ice website;  even if not using their product, the information is good!  they have technique videos, too.

 

7- n yes very important, what type of cake should i bake to cover with fondant??

What do you like?  I've done cake mix cakes and covered.  I've done the adjusted mix recipe for a firmer cake (Durable 3D cake recipe on this website.)  WASC seems to be popular. I've never done one of the "light" "airy" cakes like chiffon or angel food, but I just Googled "best cakes for  covering with fondant"- sounds like just about every kind of cake has bee successfully covered by someone!
