Cooking In Two Tins....

Hey Bakers :)

 

I'm new to baking (even though I'm over 40!) and have just bought myself my very first electric mixer, which I am looooving!

 

Anyway, I'm really keen to make some cakes, even though I don't eat cake....also, my partner doesn't eat cake and we have no children to eat cake. But, I still would love to be able make a decent cake, just have to find someone to give it to. But I'm getting off the subject, sorry.

 

I have a couple of recipes that I'd like to try out. The recipes say to use two cake tins and put them both in the oven together, pretty standard stuff .... But, what do I do if two pans don't fit in the oven side by side? Is it OK to put them on two shelves, and if so, I'm guessing they would cook slightly differently so should I swap them half way through cooking or would opening the door stuff the cakes?

 

Also, how long is it OK to let a cake mix sit for a while before baking it? Can I make the mix, cook one cake and then another afterwards from the same mix or will the mix deteriorate while sitting?

AYou can bake on different racks. Yes to switch positions halfway through. None of my recipes are so sensitive that opening the door to switch positions would have any effect. Yes you can hold batter. Batters with baking powder can be held for days in the fridge and weeks in the freezer. No commercial bakery could function without holding batter.

AI made a cake that required me to bake 6 cakes. To save some time I tripled my recipe. When the first cakes were baking I left the rest of the batter in the bowl. I didn't put them in the pan until right before I put it in oven. They turned out perfect for me.
