Cake Storage Dilemma

AHi everyone ,

I am making my friends wedding cake for 10 days time . It is a three tier buttercream cake .

I was planning on baking the three tiers within the next few days and freezing them .

My question is really when would you defrost and ice the tiers ?

The venue is 1.5 hours away and I will be delivering the cake (unstacked) the day before the wedding . Would you ice the cake 2 days before the wedding and store in the fridge overnight or ice on the day of delivery .

When I arrive at the venue I plan to stack the tiers. Should I ask the staff to store the stacked cake in the fridge overnight?

Sorry if these are stupid questions , I just want to make the best cake possible for my friend given my inexperience !

AIf the cake is being decorated with butter cream I would ice the cake as close to the wedding day as possible (but not the day of... For me that would be way too stressful) and if it's possible for the cake to be refrigerated at the venue until you can stack it that will keep the cake at a stable temperature longer. Once the cake is set up you want it sitting out for the shortest time possible especially if it's going to be exposed to higher temperatures. ( I have had butter cream melt on me before:) Good luck!

The only problem is I will be attending the wedding . The church part will be 1.5 hours away so I'd worry that I wouldn't have enough time to stack on the day !

Do you think it would be ok to stack it the day before and if possible ask the venue to keep the stacked cake in the fridge overnight? I was slightly worried about the cake drying out in the fridge.

Hi! 

 

Freezing the cake is fine. 

 

Ice it the night before the wedding.

 

I would not make an extra trip to drop the cake off. 

 

I would go 2 hours early to the wedding.  Set the cake up and do any other finish work on it.

 

Setting up the cake doesn't take very much time at all and this takes care of all of your problems, like storage, asking some one else to put it in their fridge, all the handling. 

 

This is how I would do it.  I set up 4 or more wedding cakes and drive 300 miles or more in one day.  Make it easy on yourself.  You are overthinking it!  :-)
