How Do I Cut The Road Into The Top Tier Of A Construction Cake?

AHi I need help figuring out how to cut the "slanted road" (not sure what to call it but the truck is driving down it on the cake) off the top tier of this construction cake. It will be 2 8 inch cakes filled with icing. Should i cut it before I ice the cake? This is my first tiered cake so i have no idea what I'm doing lol any help would be appreciated thank you

Hi Caitie29 and welcome.  If you search for "spiral" in the search box above - there is a ton of information which will probably help.  There's a tutorial in there somewhere too.
