AHi Everyone! So my little sister is turning 5 this weekend and wants me to bake her cake for her party next Sunday. I plan on baking the layers and freezing them probably Wednesday. I can not put together the cake Sunday as I will have about an hour before the party so I know I will only have time to get the fondant and decorations on. I could possibly find the time Saturday evening to ice but that would be the latest I could do so. Anyway I want to use Nutri whip mixed with chocolate pudding for the filling between tiers. I have used this before and it seems pretty firm but I have never tried refridgerating or freezing my cake with it between layers. Should I wait until Saturday and add the filling and then refridgerate until Sunday when I add the fondant ? Not sure if it will freeze well. If I keep it in the fridge overnight, the buttercream will be on (on the outside) so will the cake hold up? Not sure if it will "sog" into the cake overnight or what will happen. Thanks!

AI have done this many times and never had a problem. I also add cocoa powder to my pudding/nutriwhip mix to make it taste more chocolate.
