I haven't had much experience with cake pops, and the experience I did have with them, didn't go very well decorating with the chocolate. I ended up making stripes on them because the candy melts got all funky on me.

I had a customer ask if I can make cake pops that have fancy swirls, and a cross on them. Based on my past experience with decorating, I am hesitant to take the job because I don't think mine would look even close to the picture they showed me. I know it can be done because someone has done it before, and that's why I don't want to say no, because if I can figure it out, I know I can do it!

Any ideas on how to get fancy swirls, smoothly, and nice "undrippy" crosses on the cake pops?

Do I just use candy melts, royal icing, or fondant?

Help!

For me, real chocolate works best. I melt the chocolate in the microwave or double boiler, its usually too runny at first, and let it cool until it gets to the right consistency. Then put it in a piping bag and pipe on. I know others say to put vegetable oil in their candy melts to help smooth it but I still can't get it to be completely smooth that way.
