Stacking Fruit On Top Of Sponge

AOkay I know this is not advisable, but a client has requested this and I want to find out if anyone has tried it or knows a way around it. The cake requested is a four tier stacked with bottom sponge and middle two fruit and top sponge! They will be 10,8, 6 and 4 in respectively. I've not tried this before I've always recommended fruit for bottom cakes of a stacked cake. Is there a way around this or am I right in not recommending for the fact that fruit is heavier?

I frequently stack fruit on top of sponge.

 

As long as you dowel properly, there's no problem whatsoever.  The dowels take the weight of the cake, not the cake itself.

AThank you Suzanne, do you use the plastic or wooden dowels or the thicker kind of dowels? I saw something about locking plate pillars, have you ever tried this method?

I used to use wooden, but my local supplier changed make and they were warped!  So now I use plastic.  I don't use the wide, hollow Wilton ones.  Just ordinary thin plastic ones.  As long as they go in vertically, they're fine!
