Giving Cake Decorating Classes?

Some moms in my area have been asking me to give cake decorating classes for their daughters.  I am self taught (and CC taught :)) and don't know where to start.

 

I was thinking of offering two series of classes.  One for fondant and one for buttercream.  I definitely need to perfect my buttercream designs though - I mostly do fondant.

 

My ideas were to provide the girls with a kit of basic supplies that would be theirs after.  I was thinking cake turntable, offset spatula, piping bag and tips.  What else should I include?

 

I also need ideas of what to teach and how many classes/length of each class each series will be.

 

For example for the fondant series:

class 1:  how to ice a cake with buttercream or ganache

class 2:  covering a cake with fondant

this is where I get stuck.  All the cakes I have made have been so different.

My idea is to have the girls work on dummy cakes and then the last class or two have them cover and decorate an actual cake for them to take home.

 

Any ideas an suggestions are greatly appreciated!
