A Great Event But How Do I Do It?

Hey all!

I've been thinking of participating in some rather LARGE Festivals that are upcoming. Most food vendors at these events have food trucks, etc. Well I don't have a food truck but I am thinking of renting a tent. The events  are in april and in august. How would you set up such items: I'm thinking that due to the heat in august, april I could do more cake, but in august  I would offer cookies, brownie bites, cheesecake bites, and mini cupcakes. Any other suggestions? I also thought about cake pops, and pie slices. I have never done anything like this as an outdoor event but have done it plenty of times indoor. Any ideas on other menu choices or how to set this up outside? Maybe a few tables covered with linen, decor, etc? Just trying to get ideas. The event usually hosts about 130,000 every year guests with free admission but there will be rides, food, live music, games, etc. How do I make this an awesome day?! Excited and definitely outside of my box, but I'm a go-getter and plan to do this but with careful preparation and excellent execution! THANKS GUYS!!!

AIf using pie....we had a church event with pies donated and they could taste pie for a quarter... had all flavors of pies, and gal would take a small like 4 to 6 oz small tasting cup and put a tablespoon of the pie flavor in tha tasting cup and give them...this would work for you... with pies

You might need to restrict your tables and chairs to your own customers. Otherwise people who purchase meals from those food trucks can enjoy your hospitality for the cost of a small cookie.
