AI'm so confused. I'm making a 3 tier cake 10" 8" and 4" and someone gave me a 8" circle of strength cake plate for the Middle tier and said I could use that as support without dowels. Will that work? Is that the purpose of the circle of strength came plates?

No, you also need supports.
