Here's the best recipe I've ever tried...admittedly I haven't tried many, and I've only made this one twice and both times I used Nestle white morsels, but it's still the best:

The first time I thought they were near perfect, just a little too sweet (I know the white chips didn't help).

The next time I cut back the sugar and it did the trick, but I can't find the paper I wrote the notes on...
I think I removed a Tb. of white sugar and 3 Tb. of brown...OR that's what I had planned to do, but when the time came, I may have removed 2 Tb. of each.

Also, the first time I used vanilla bean paste (Nielsen-Massey) and the second time, vanilla extract...Oh man...what a difference, the paste wins big time.

I will DEFINITELY make these again...

AIf you live in the US and are near a SAMs club, then pick up a bag of their brown sugar. The cookie recipe on the back is amazing!! Mine have never turned out flat and they are soft. Or I can type it out for you, it's a simple recipe. :)

A2 1/2 cups AP flour 1/2 cup granulated sugar 1 cup packed brown sugar 1/2 cup butter 1/2 cup shortening 1 tsp baking soda 1 1/2 tsp vanilla 1/2 tsp salt 2 eggs 1 cup chopped nuts (optional) 1 1/2 cup semi sweet chocolate chips

Stir together flour, soda and salt. In large bowl, beat butter and shortening on medium speed for 30 seconds.

Add sugars and beat until fluffy. Add eggs and vanilla, beat well.

Add dry ingredients to beaten mixture, beating until well combined.

Stir in chocolate chips and nuts. Drop from a teaspoon 2 inches apart onto ungreased cookie sheet.

Bake in preheated oven at 375 F for 8-10 mins or until golden.

Makes approx 6 dozen cookies.

In my opinion, if you don't want your cookies to be hard and flat, you should use baking powder. For example, I can offer you this Soft chocolate chips cookies recipe. When I make cookies based on it, they are always very soft, not to mention the fact that they are tasty!
