Those round ball pans or the football pan or the giant cupcake pan are all PITA!  You need to put a flower nail ( metal ) in the middle to help conduct heat to center so it will cook evenly.

or if there is a small round core you can put in to help cook it.  ( I know I am not putting an accurate description to that).. That's why a lot of cakes go in an angel food type pan... because the center would never cook.

Basically these pans are shaped in such a way the outside is cooked but middle doesn't cook enough so you have burnt /crispy outer part and barely cooked inner.

AI have a giant cupcake tin and use it successfully as is. However, trying to cook a gluten free mix in it is proving to be a bit of a problem, it's starting to rise then just imploding and leaving a big hole in the middle. At the risk of sounding stupid, what's PITA and do you mean a flower nail as in what you pipe buttercream roses on Sewsugarqueen?

APITA - pain in the a$$ Flower nail - yes, the one we use to make buttercream roses with :)

I have a wilton wonder mold (doll cake pan) and it comes with a heating rod. I use that as well when i bake in my giant cupcake pan or ball pan as it is longer than the flower nail..
