Advice On Making 4 Cakes Ahead Of Time

Hi Everyone,

I would like you advice on a problem i am facing.

 

I have 2 cakes due on the 15th March, one on the 16th March and one on the 17th March. I have looked into the ideas that i want to have for the cakes and chosen ideas that are not too complicated and time consuming.

 

My major problem is that i will be traveling for work on Monday evening and will be back on Wednesday evening. Thursday i have to go to work and friday i am home as it is my day off to begin decorating for the 2 cakes due on Saturday.

 

So my question to anyone who has faced this before:

Will it be ok if i bake the cakes today and fill and cover with fondant tomorrow, place them in a cool area till thursday evening when i can begin working on then over the next few days?

 

or do you think it is better to bake them today, freeze them till Wednesday evening to defrost overnight and then begin the decorating process? 

 

I am really hoping that someone has been through something like this and has some experience that they can share with me and the rest of the CakeCentral group.

 

I also apologize if this has been talked about in a previous post.

AI would choose your second option, that's how I always do it. I can only decorate in the evenings so have to do everything in stages. I would also make any fondant accents that you may need to dry in advance. Have fun!
