Don't you HATE it when you make a couple of dozen cupcakes - same recipe as always; same measuring scoop as always - and you're ONE short so you have to whip up another dozen just for ONE to make up the order! Grrrrr!

Oh well, my boys will be happy!

AThat's when I stand there scooping out 11 spoonfuls--one from each cupcake--to fill the 12th!

That's exactly what I was going to say!!!  no way I'd make another batch.

So frustrating!!!!

My solution as well is to scoop a little out of each cupcake, but sometimes that makes a goopy mess.  Or, in the past, I have taken the leftover batter and frozen it and used it for a 6" cake order.

AIt is for occasions like this when keeping frozen batter is so handy!
