Looking for some suggestions on flavors that would compliment chocolate chip cookies used as the concept for three tier wedding cake. Each layer is composed of a 3 chocolate chip cookies with a European butter cream between each cookie.

 

I've considered different flavors for the European butter cream and not sure what would work the best. I've considered: vanilla bean, lavender, mint, white chocolate, coffee, irish cream butter cream but of course interested in any other suggestions.

 

The cake is, not surprisingly, very rich but find the European butter cream adds a lot of flavor and isn't as sweet as tradition butter cream. Also found it tastes much better complimented with a glass of milk so plan to served glasses of ice-cold whole milk with each slice of cake.

ASome kind of berry..strawberry/raspberry..those go well with chocolate (or in this case, chocolate chips). Something a little more buttery? Like caramel or toffee maybe.
