What Size Pans To Make 3 Tiered Cake To Feed?

I received a cake order for a 3 tiered cake to feed 19 people.  What size pans should I use to made this cake.  The woman wants scroll work and 2 roses for top, 3 roses for middle, and 6 roses for bottom.  The other question is how much should I charge for something like this.  This is the first time I have ever had such a small  3 tiered cake request.  TIA

AI do lots of minis like that. But...that's even too small for me. If they insist on three tiers, it would look best as a 4 6 8, but that's about 35 servings, which they would need to pay for ALL of. You could do a three inch tier for the top, and.figure out the other sizes for the rest, and another option is a 4 5 6, BUT that doesn't leave room for flowers really. A one inch difference like that isn't suitable for all designs.

AJudging by her description, she has no clue how tiny that cake will be. And any roses you make, tiny. I'd make sure she understands how small that will be, like really understands very well. As for charging, well that's something you need to calculate based on your costs and what you want to make. Personally, I have a $150 minimum, but that gets a small two tier of a 4 and 6" round tier, minimally decorated. Three tiers, based on that description, would probably be inthe $250 to $300 range. It's a small cake, tiny serving amount, but it's still three tiers of cake and all the decorations. Not really any less work than a cakethat serves double, even triple that amount.

AUgh...the post before my last one got deleted. So a 4 6 8 is generally the smallest 3 tier I do, and that serves about 35. You could do a 4 5 6 and that would be closer to her needs, but that doesn't leave room for flowers, and a one inch difference between tiers like that only works with some designs, not all of them.

A cake that tiny would require charging a premium for the miniatures work you will need to do!

 

I would not quote this cake as discribed. I've had hairdressers talk me down before, this is the same situation.

 

If it was me, I would offer the choice of either a 3 tiered cake with larger dimensions and more servings, or a 20 serving cake with a different design.

 

But if someone twisted my arm and made me price out that exact cake, it would be $225.

I have a 3 piece cake set that consists of a 5, a 7, and a 9 inch pan. The pans are 3 inches deep. I use 2 cake mixes to bake this up. I do torte the 3 inch cakes. You would have to make pretty small roses. To help with pricing I think you might want to use ribbon roses of fondant or buttercream roses. The directions for this set says it feeds 24 people. This is really cute when it is done. I have never done  it in fondant, but in buttercream I would probably charge less than has been quoted above. Just trylng to make it a little more practical. I know that a fondant covered cake with gumpaste roses and all premium fresh ingredients costs much more than my humble idea.
