Hi

When you guys are making a barrel cake do you crumb coat then dowel then place a piece of parchment (to stop the next cake board sticking to that layer.)

then place the next cake on a board directly on top.

Not sure if I need the parchment or not , I  am going to Ganache

Thanks

This might help. I do this for all my tiered cakes. When I have iced my cake and placed the dowels in the first tier, I place a circle of parchment paper on top of it that is the same size as the next tier. I then add a thin layer of icing on top of the parchment circle and place the second tier on top of it so that when it is unstacked for serving the BC is not ripped off the cake underneath it.
