AIm looking for a good chocolate buttercream. I used a recipe from paul bradfords site and I had to add a bar of chocolate but I found that after abit it became so hard...it broke my stand mixer paddle!! Can anyone suggest a good recipe? also...would you fill the cake with choc buttercream AND jam?? Its a surprise for my sister in law so any ideas...thanks xx
I use IMBC and add cocoa powder mixed into just enough espresso to make a paste, then melted chocolate. It never gets hard like you were describing.
What sort of jam are you thinking of using? I tend to alternate fillings with butter cream. I use 4 layers, so I usually do first layer of the other filling, second butter cream, then third filling again.
I love whipped ganache as a chocolate frosting, or just regular ganache for under fondant. Can't get much more chocolatey than that!
AThanks for your reply...imbc? yeah the one I made went rock hard...broke my.mixer paddle-so u csn imagine how hard!! Hehe I always alternate fillimgs too. In a plain vanilla I usually use vanilla buttercream and then jam n then the buttercream again...not sure if that would work for chocolate cake tho...or will it?
I have used this chocolate buttercream frosting for my cake. I like it, it's easy and very tasty. Moreover, according with this recipe it is not needed to add a bar of chocolate, just cocoa
