Original Red Velvet Cake Frosting

Hey everyone! :) 

 

A lot of people say that it's cream cheese frosting that should go with red velvet cakes/cupcakes but after some Google search, I found several pages saying that the traditional frosting is actually the cooked "ermine" frosting. This cooked icing is made of milk, flour, butter, and sugar. 

 

Do you guys think I can find proof that ermine frosting is really the traditional frosting for red velvet cake? Maybe some credible online article? I am convinced that it is the traditional for red velvet, but I'm not sure how to convince some people about it.

This isn't online, but my Better Homes & Garden cookbook say that the red velvet cake is also known as the Red Waldorf Cake, which goes back to New York City's Waldorf-Astoria Hotel.  It uses the creamy frosting made with milk, flour, sugar, butter, and vanilla.

AWho needs convincing? Traditional or not, "cooked flour" frosting does not sound appealing, IMHO, and this is an ermine [IMG]http://cakecentral.com/content/type/61/id/3182308/width/200/height/400[/IMG] Adorable? Yes. Delicious? Possibly. But certainly not on red velvet cake. ;)

AYou are right, although I'm not sure where you can find proof. My mother has always called it "Poor-Man's Whipped Cream" and it must be made with granulated white sugar to get the right texture. Good luck! I'd love to know if you find proof! :D
