Need vegan dessert recipe for a special friend.  While I do bake extensively I have never done vegan so I can't tell what would taste good just by looking at a recipe.   Have a limited resource for foods as I am not near any big towns for next few weeks.  Appreciate any help....this is an area I have no clue what I am doing. looking at the baking limitations I have to say hats off to you for people who can create good desserts without eggs or dairy!

AThis is a really good vegan chocolate cake recipe: http://www.bestrecipes.com.au/recipe/eggless-chocolate-cake-L1236.html I have even made it with gluten free flour and it was good. For icing, you could make buttercream with non-dairy ingredients (like crisco) but it might be nicer to just dust it with powdered sugar and serve it with some fresh berries. Oh! AYou could make sweet potato caramel, I made it last night it was good, did still taste like sweet potatoes.

3 lbs sweet potato 1 1/2 cup water Peel and cut up potatoes and put in to a 9x13 add 1/2 water. Bake for one hour covered with foil and then uncover place back in over for 15 min. Take it out and add 1 cup of water. Place liquids and solids in a strainer, lined with cheesecloth. Let in drain in a saucepan, when cool enough to handle squeeze and get all the liquid out you can. You should end up with a cup and half of liquid. Bring liquid to a boil, then turn down heat to simmer and let it simmer for 15 to 20 min or until it starts to thicken. Stir often during the last few minutes. Pour in to a jar, and place in refrigerator for up to two weeks.

i bake vegan for allergy reasons, and we LOVE this recipe for banana cupcakes (or cake, no difference). It isn't a recipe that is 'good for being vegan' but an actually delicious banana cake recipe! When I make it, I leave out the 'banana split' elements and just use the base cake recipe (the pineapple and chocolate) If you are going to be baking more for her, the book Vegan Cupcakes Take Over the World has some great recipes in it. http://houseofvegan.wordpress.com/tag/banana-split-cupcakes-recipe-from-the-book-vegan-cupcakes-take-over-the-world/   I have topped it with vegan cream cheese cinnamon buttercream and a sprinkle of Frosted Flakes (naturally vegan). Even though vegan recipes are 'without' they can still be super fun.

vegan banana bread. 

 

  • 135g sugar (I use dark brown)
  • 70g vegetable fat 
  • 250g self-raising flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon bicarbinate of soda
  • 1/4 teaspoon salt
  • 3 mashed ripe bananas
  • 4 to 5 tablespoons soya milk 
  • just combine all the ingredients and bake at 180c for about 40 min.

 

 

this banana bread works well the first time i made it the soya milk but it  a strange flavour. so i swapped it out and used almond milk which was a lot better. I guess rice milk would work too if nuts are an issue

The banana bread looks very tasty and most of ingredients are in kitchen... will try the almond milk swap.... sounds like it would add a bit more flavour.   Thank you.... love all you people willing to help out when we run across areas we have no expertise in.   Just like kindergarten... it's all about sharing:smile:  what you are willing to part with. ( Totally understand family recipe secrets).

FYI, some brands of puff pastry, pie crusts, and phyllo dough from the freezer section at the grocery store are vegan, just check the label to be sure there is no butter, eggs, or milk. This makes it super easy to make a vegan berry or apple pie! Using vegan dough you can modify recipes you already love without much extra effort.

AHi, Because of our family's food allergies, everything I bake has to be vegan (and gluten free too). I'm always searching out new recipes and a few months ago I found a great vegan dessert blog called "chocolate covered Katie". I've tried a lot of the recipes and have had great success! Only down side is that a lot of the recipes are single serving, but that just means that I have a chance to brush up on my math skills!:grin: Good luck!:grin:
