AHi everyone, the sponge cakes I make always come out dry, I have tried so many methods like adding little oil, tried mixing until pale, added extra eggs even worked on my oven temperature but it still always comes out dry, though when I added a little oil to my last trial it came out a bit moist but it was still dry. How can I make this right?!! Thanks in advance. This is the recipe is used. 200g margarine, 200g sugar, 4 medium sized eggs, 1tsp vanilla, 1 1/2tsp of baking powder and 200g of flour (1tsp of oil)
AAre you overbaking? Is your oven the right temp? Sounds like a standard Victoria sponge recipe which shouldn't be dry.
AIf you've tweaked and tweaked and tweaked that same recipe, but to no avail, you might consider finding a new one.
You might want to consider using real butter in your baked goods.
AI don't think I overbake cos I remove it from the oven immediately the skewer comes out clean. There was a day I brought it out before it came clean and the inside was underbaked! So confused. Haven't tried baking with real butter before, there was a day I added 1/4 cup of buttermilk to it (1/4 cup of milk with a 3.75ml of vinegar) to it and it still didn't come out moist! Other recipes I have looked up either have more flour added which I know wld make it harder or more sugar!! In a dilema!!!
A sponge cake is a dense and sturdy cake but, has a tendancy to be dry. If you like the flavor of your cake and want to stick with it, brush the layers with a simple syrup.
AI have the same problem with the Victoria sponge, when it's baked it's lovely and light but the next day it's so dry. I've now stopped using that recipe and on a search to find one that isn't dry lol
AI think am going to try adding a simple syrup to it and see how it turns out. Fingers crossed.
