Fave White Cake Filling That Isn't Fruit Or Chocolate?
Baking By dukeswalker Updated 24 Jan 2014 , 5:12am by dukeswalker
I have a client who loves (and loves only) white cake with vanilla buttercream. I would love to offer her up some variations for filling besides vanilla buttercream that are not fruit or chocolate based. Any suggestions? I'm sort of drawing a blank....
That's why the favorite flavor so far is Apricot. (with my cake eaters) That slight tang is so perfectly matched with White Cake.
I agree, my fave is a scratch raspeberry filling - just the right amount of "tart" to go along with the sweet white cake. However, this gal ADORES white cake and wont order anything except that. She orders frequently from me and I would love to be able to offer up some filling options just to change things up a bit. We did Oreo Truffle filling once but they weren't digging the chocolate corrupting the white.
If she likes vanilla, keeps ordering that, has tried other things and prefers vanilla, let her have vanilla. as long as she keeps ordering from you she's happy.
I'd say just keep making her what she wants....you know like 'Burger King'....Have it your way.
and I say this thinking of the fact that you are 'all cake, all the time' so it seems dull to you, but she's just 'every now an then cake'.
The repeat business is because she likes Exactly what you make, the same, every time, which make it not only Perfect, but Perfectly Predictable Consistently Delicious and Special to her.
♦ Carry ON White Cake with Vanilla ButterCream ♦ Carry On !!!!!!!
i have a filling that is made of cream cheese, sour cream, some powdered sugar and more lemon juice than vanilla--i usually put some gelatine in it to hold it--i think it's been called italian cream --but it's filling--your client might like a cream cheese filling?
Don't throw stones at me, but my favorite ready to eat cake is the Vanilla Pepperidge Farm cake from the freezer section of the grocery store. Sometimes people just want plain, even though it sounds boring to you. Let her keep getting vanilla!

MBalaska said it perfectly. If she loves white cake with vanilla buttercream then that's what she loves. If that cake (YOUR cake) is the perfect one for her then it's her idea of cake perfection. Don't mess with that :)
whipped cream would be killer--add some grand marnier--mmmm--
bavarian cream, pastry cream
AWhite chocolate cream cheese icing Almond Lavender Butterscotch Peanut butter Pumpkin Vanilla bean (still vanilla, but taken to another level?) Rum Horchata (cinnamon almond) Pistachio Mint Honey
I but she's just 'every now an then cake'.

I agree with this. I don't know the circumstances, but the whole family may look forward to that cake at every celebration. Let her know you offer other things so she doesn't go elsewhere for something different. But why be making a lavender infused icing if you don't have to?
My favorite baking days are the ones when everyone ordered vanilla that week. I'm grateful that not everybody wants grapefruit cake with chai icing.
I agree that if that's what she likes, just give it to her! MB's point is great. However, some people (myself included) are eager to "convert" plain vanilla people. I mean, I LOVE good vanilla, but I can't understand why some people won't ever go out of their comfort zone (my boyfriend, my nephews, etc!). Especially if she knows/loves your product, and therefore trusts you, you have an opportunity to introduce her to something she might REALLY love, and would never thought of on her own. Maybe go gradually by incorporating subtle flavors into vanilla BC. Coffee/vanilla, maple/van, honey/van, white choc/van, coconut/van are favs with my folks.
Vanilla custard, coconut custard, lime curd, cannoli filling, ginger BC, marzipan/almond paste filling, or various liquors are a little more out there, but all delicious and complementary to white cake. Of course, if these don't excite her, don't push. Plow on with vanilla!
AWhat is the point of all that effort? You're running a business, right? Do you make more profit on the other flavors? If you have lemon curd or white chocolate raspberry just sitting around waiting to be tasted, of course offer her a taste. But, plan this outas in, "go in gradually"??? I just don't understand. Are you trying to further cement her business by getting her hooked on more than one flavor or something like that?

Well, I'll give you an example from my last vacation. We returned to a favorite restaurant that we love and frequent when we visit town on vacation. Ordered a normal Iced Tea. I almost threw-up when I tasted it and smelled it. Someone had taken it upon themselves to make a multi-fruit flavored addition to the plain tea. One of the flavors almost brought up my lunch. And it wasn't even mentioned on the menu. False advertising, ruined expectations, bad experience for me.
Some people may be allergic to certain flavors also. Don't mess with success. But I don't sell so what do I know about business.......nothing. What do I know about being a customer.. a little.
MB as I said - I totally agree with you. Give her what she wants. I was just trying to address the OP's actual question re: flavors, not her motives. I'm sure she has reasons for wanting to change it up. And certainly, to your iced tea point, I wouldn't change the filling flavor without consulting the customer! I would only do it if she expressed some interest in trying something new.
Good points. and you did offer a big bunch of flavors to choose from. That will be helpful to lots of people reading the thread.
I think you hit the nail on the head - it is ME that is looking for a change, not her. Just because I I love all sorts of yummy combos doesn't mean I need to make everyone else love them too. Lol.
Don't fix what aint broke - right? She obviously loves straight up plain jane - I'll keep making what she loves.
