i have a client that wants brown bear shaped 300 cookies,  He bought me the cutters & the baggies he wants me to use.  He said NO frosting/icing etc…  I feel like they will look incomplete.  I wanted to at least give them eyes!  any suggestions & I'm not sure what to charge since he supplied the bags & about 4 diffent size cut outs.  the biggest about 5 1/4".    Lastly I've been looking for a roll out recipe that will turn out a BROWN cookie.  I have found a chocolate recipe (i have not tried yet) I don't want gingerbread or molasses… Whats your thoughts on a brown sugar cookie? Will i get that "BROWN" bear look?  i know i have a lot of questions..  I've never really done a custom cookie order…   Thanks for any advice in advanced!

Your biggest problem will be to keep the legs from breaking off.  Especially without some Royal Icing to help firm them.  Brown bears are not only 'brown' but in summer they can get pretty blonde. so it sounds ok.

Cheers,

ALOL ...on blonde... He needs them brown because they are for a UCLA event and the mascot is an ugly brown grizzly :/ I def worry about the cookie not being "firm" sugar cookies seems to be the better choice.. do u think I could just add brown food coloring to it??

The No Fail Sugar Cookie recipe on CC is a good firm cookie that many cookie decorators use.  Roll out 1/4 to 3/8 inch thick.

Sure, you can add brown food coloring, unless they'll go for chocolate.  Then replace some of the flour with cocoa powder.

This is not an overly sweet cookie, as it usually has icing on it.  My family and friends call it my shortbread cookie.

Sounds like you dodged a big time project that wouldn't have paid off.  WHEW...

For the reason of the legs, it's been a most difficult cookie for me. It's even worse with the full body moose,  both legs and antlers.  Arggggghhhhh.  :x
