I have baked two cakes for upcoming events, which have both been in the freezer for the last two weeks.  My problem is that I have been reading up on freezing cakes and everywhere seems to agree that I should wrap the cake in plastic wrap and then foil.  I let my cakes cool down and then wrapped them in 3 layers of foil - no plastic wrap! - and then froze them.  They are both madeira cakes.  My question is this, will they be ok or will I have to rebake them? (I am new to making cakes).  Many thanks in advance

AI'd go ahead and pull them out, let them defrost a bit in the foil then unwrap.

Have you leveled/torted them yet? If not you will be able to taste the cake scraps and make sure they didn't absorb any flavors from your freezer.

I won't serve anything I wouldn't eat myself, I think that's a pretty good rule to follow.

If I ever freeze cakes I wrap in saran then foil just because it seems to seal them better (the plastic I mean-the foil I use for added protection and to catch most of the condensation when I pull my cakes out). My fiancé is always telling me that's excessive but it's just the way I've always done it if I needed to freeze something.

I'd definitely taste it though!

Two weeks is not a long time to be in the freezer. Unless the foil was ripped, the cakes should be fine.

ANo I haven't done anything to them yet. I was going to do what you suggested anyway, and my rule of thumb is the same as yours lol! Thanks for your help
