Best Way To Line A Tin For Mudcake

Hi, I have Fat Daddio tins and trying to bake a mudcake (the Cadbury recipe) in it.

 

Is it better to line with baking paper or grease and flour?

 

And do you bother with bake even strips?

 

I just made one and it took 40minutes longer then suggested in a 7" tin, I used bake even strips and baking paper it just didn't seem to cook up so well.

I always spray with cooking spray, and line the base of the tin with a circle of kitchen paper.

 

For bigger cakes, I cover the top of the tin with foil. You can do the same with smaller cakes - I find it helps them to rise more evenly.

AI have always double lined tins with greeseproof paper for my mud cakes...they take a long time in the oven. Not sure if it makes any difference but just the way I have always done it....
