I've tried regular cake mix from the grocery store and recently tried to use commercial mix (Dawn's Baker's Request). Each time my cake/cupcakes come out VERY spongy- like you squeeze them and they return to there shape- almost like a nerf ball.

 

Does anyone know a way of modifying a mix so it is closer to the texture of a homemade cake/cupcake????
