Hi, new here, not yet at the point of selling my cakes, though I think I will be soon.  Do you think putting the cake in the fridge the day before you give it to the person helps keep it fresh or just dries it out?  I've frozen my cakes before, but feel like that makes them more susceptible to being dry.  Thoughts?

i fridge all my cakes because most of my fillings require it for one thing and to enable a sturdier product for delivering--

they will be in there for 2-3 days super wrapped up, or encased in icing or boxed & ready to go--

you are correct--refrigeration does dry things out including cake you just have to be careful--

some cakers would not dream of chilling their cakes--

I always use simple sugar syrup, your cake will be moister....
