Hi, I am planning to do a 3d Lightning mcqueen cake for the first time in february.  I will be baking it a week before to freeze.  I will bake it in two batches in a 10 inch square tin.  I am planning to carve it when its half defrosted,  can i put the filling in while it is still half defrosted?  

Also, I will be using Ganache to fill it and to cover it.  Can you please tell me what ratio chocolate to cream i need for the filling and what ratio I need to cover it as this would be firmer.

Yes you can fill it with ganache when the cake is half thawed and if you google ganache there's a million videos and DVD tutorials.

2parts dark chocolate to 1part cream.  you should be able to use the ganache for filling and covering as well.  eg.  600gm chocolate  300mls cream.  Like Denise said get onto utube, lots of tutorials and recipes too.

Thanks for your replies, I am also wondering how I am going to do the writing on the tyres.  I can't pipe well and I don't really want to spend over half an hour plus alot of icing sugar to make the royal icing.  any ideas to how else I can do white writing on the tyres (they have to be small enough to fit so I can't use stencils / cutters.

AEdible ink pens and rice paper? You could do an inverse design where you leave the writing the same colour as the paper and then colour the rest in black? I think writing on the tyre with white paint might look neater though as the paper might ripple.

AIf you want white - RI? If not, one coat of silver should work - light enough to look grey and not sparkly? Haven't looked for white edible paint, have you googled it?

I know the copyright police will be after me for this this one but...google coolest cakes lightning mqueen pattern. There is a Dad on Coolest Cakes who has posted a couple of pages that you can print on edible paper that includes the tire graphics for Lightning McQueen. I used these images when I made my son's b-day cake this year.
