AI want to use fruit filling for a cake, any good tips? Also will be using fondant over cake, will the fruit filling make it uneven?

I often use unsweetened fruit spreads for my fillings. I think it's called Fruit Polander? Something similar to that, or basically any jam/preserves where extra sugar hasn't been added.
