ADoes anyone have a good recipe for chocolate swiss merengue buttercream? Do you add cocia powder or actual chocolate and his much? When in the making part do you add it? Thanks a million!!!

After its all come together I add 6oz of cooled melted chocolate to the standard SMBC recipe

Adding the chocolate is really the best IMO, but I have just added a good dutch processed cocoa with pretty nice results,  I was out of chocolate (I think that's against the law - lol)

A also add melted cooled bittersweet or semisweet chocolate to taste and it is delicious.  Another option, which may be  bit more adult oriented is to dissolve good dark cocoa (I use Hershey's special dark)  in equal amounts of strong hot coffee.  stir until smooth and cool.  Mix into buttercream.  Add a little godiva chocolate liquour, and it is wonderful.  Kahlua is also great for a more mocha flavor.  HTH!

AI mixed my left over SMBC with white chocolate ganache and the result was a delicious crumb coat with wonderful sharp corners!
