Cupcake Questions!

So I need to make about 100 cupcakes for a family event.  This is for a family Chanukah party so my idea is to do a spin on sufaganiyot which a food associated with Chanukah.  Usually, they are a jelly filled dougnut -YUM!  I am thinking of making cupcakes filled with jelly, chocolate, custard, etc.

 

I have a few questions:

 

1)  What is your preferred method to fill cuocakes?  Do you core them and fill or do you use a top and inject filling into the cupcake?  Why?

 

2)  What buttercre flavors should I use to pipe on top of the cucakes?  Should I stick to the same flavor that I put inside each cupcake?

I usually core because I know I can get lots of filling in there especially if I'm doing a Boston cream cupcake. icon_biggrin.gif I've never done the injecting so I'd like to hear if you can get a good amount of filling that way. Does it make the cupcake puff up?

I don't celebrate Chanukah, but it sounds like I might want to celebrate with your family! YUM!!!!! haha! 

 

Answers to your questions: 

1 -

I do both - it depends on the consistency of what needs to go in the cupcake. If it's a thin filling like a jelly, I just use a large round tip on a piping bag and inject it into the cupcake. I hold the cupcake in my hand and squeeze. You will actually feel the cupcake move and expand when injecting but the shape does not change. You will get the hang of it after you have put too much in a couple times! :) If it's a thicker filling, I core it! 

 

2 - 

You cold do a variety of flavors on top of the cupcakes! Dip in ganache, do a vanilla buttercream if you put chocolate inside, chocolate buttercream, mint, cinnamon, etc…you name it, you can do it!!!!
