Stupid Butter!

does anyone else have problems with their butter not completely mixing in with the Crisco? ive had this happen twice.. the other day, after I made my buttercream, I noticed it had little specs of butter in it, that wasn't fully mixed in. I had let the butter stick set out all night so I know it was at room temp.. i even let it mix longer once i saw it.........what happened?

Perhaps it's the brand of butter. Are you making Wilton style buttercream? First cream your butter with some of the confectioners' sugar until you no longer see those specs. Then proceed as usual.

And P.S. - refrain from insulting the butter. Trust me, I learned the hard way. Ingredients don't care for being called "stupid" or being ridiculed in other ways. I have stories...

first time I tried name brand, land o lakes;  second time I used the generic ..........I mixed the butter with the Crisco. then added my flavoring.. meringue powder, and milk.. like usual...   most of the time I use all Crisco, no butter, but when I do use butter,, it wont mix...

but ill try mixing it first with the sugar,,,,,,,but then do I add the Crisco?

I had this problem last week, mix your shortening until smooth, then add melted butter.  Mix that completely until there are no lumps, then add in your sifted powdered sugar.

Yes melted butter.  Just keep in mind that the butter is warm and a liquid consistency.  So your icing will be softer.  As the butter cools down and re-solidifies your buttercream with harden a bit more.  You can always add more water or icing sugar later to get your desired consistency.

You mention using meringue powder. I wonder if that is what is causing those specks?  Can certainly be.

AI mix my fat for about 15 minutes before adding any flavorings or sugar. I use hot whipping cream to thin it out and that usually smooths out any tiny lumps. My butter never gets truly soft even being out all night because my house stays so cold.

And you get blamed? Reminds me of a chihuahua, a true little gas bag  8O, we used to have. My mom was in the driver's seat when she pulled into an old full-service gas station and the timid little dog sought refuge under my mom's seat when the attendant reached in to unlock the hood. Right at that opportune moment, she, (the dog), let loose with one of her best. My mom sputtered "heh heh, it's my dog!" …. Yeah, lady, I'm sure I believe that, as no dog was in sight!

 

It's been a family joke ever since.

A double post! Did your mischievous duo each get a crack at the computer? I'd take them in a heartbeat but I have a very energetic Toy Fox Terrier and I think twixt the three of them, I'd have to move out!

 

But to get back to the  subject of butter, (drool) I've got six loaves of potato bread in the oven and when I sit down to a thick hot slice, dripping with that yellow ambrosia, I will be in heaven. Don't forget my avatar, I love all things dairy.

Jan, I will PM you my address so you can send me a loaf.  Low carb, schmo carb.  LOL!

 

And yeah, Bridget was hanging out with me last night while I was baking.  She waits in the hallway outside the kitchen and watches me while I clean up.  She always comes down when my husband goes upstairs because I guess she doesn't like that I'm by myself.  Ok, I guess I'll keep her but Geoffrey is still up for grabs.  Haha!
