Baking cake with fondant

Hi

I need to deliver a cake Saturday afternoon. I'm planning on making the cakes, crumbcoat with smb and let it settle overnight.

Question is should I let it settle inside the fridge or over the counter is fine? If is fine over the counter, once I let it settle over night , I will do the final coating early morning put it in the fridge for 15-20 mins to let the smb harden a little, put the fondant and decorate it.

Question2, can I put it in the fridge after decorating for half an hour to an hour?
Question3, did I miss a step or the above process will be fine? Any suggestions will help thanks

I really like letting my cakes chill in the fridge over night.  They seem rock solid when I do that.  Personally, I think 15-20 minutes wouldn't be quite enough time.

 

I don't like to put my fondant covered cakes in the fridge, but some people do that.  I also have problems with condensation, etc.

Settling doesn't occur in the fridge when chilled.  Cakes settle at room temp.
