I've just got an order from a winery for a custom cake and some sheet cakes that they can serve to their customers to celebrate their 5th anniversary. I have my custom cake cost worked out but don't know what to charge for the sheet cake. I'm thinking about quoting them on a 1/2 sheet so they can decide how many to order. This is my first corporate order and second actual order other than friends. My cost per recipe slice is 1.18. I'm really puzzled as to how to charge for this. Any ideas?

APrice your the sheet cake the same way you price your tiered cakes: ingredients + labor + allocated overhead + profit based on market value.

Thank you I spent time figuring out the ingredient cost and my hourly time (not sure what most people pay themselves) but I think I'm not too far off from the going rate in our area.

I`ve seen decorators charge $2.5 per slice if the custom cake met a minimum purchase. So, essentially if ordered a wedding cake for 100 servings (100 servings being their minimum) at $5 a piece, they would offer the sheet cake at the discounted price of $2.5. otherwise it was more a slice. 

 

Don't worry what other people are charging in your area. If you are good, charge what you deserve to get, people will find you and pay for quality.

Thank you for your suggestions. I think I am close. I felt the same way, that if they ordered a specialty shaped cake then I could make the sheet cakes at a lesser price than the specialty cake. I like the idea of cutting the cost per slice in half. That makes it a lot easier to figure out. Although this time around I'm a little less than 1/2 but it's okay since it's my first big job.
