Hello,

I am making a fondant cake and they have requested peaches and cream filling. I know whipped cream has to be refridgerated but fondant can not be. Is there something other than whipped cream I can use as the filling that does not need to be refridgerated and that taste like whipped cream? (no buttercream)

ABettercream, Pastry Pride, Frostin Pride all can be found in restaurant supply places, Cash n Carry, etc. If you do not have access to these places you can go to your local supermarket bakery and ask them to sell you some of theirs. Most grocery stores use the whipped topping/ filling that doesn't need refrigeration.

Fondant can DEFINITELY be refrigerated.  You just pull it out and set it on the counter to come down to room temperature.

I personally detest Bettercreme because it has the same texture and taste of Cool Whip.  Stabilize your whipped cream with some gelatin and use that for your filling.  It will taste way better than the fake stuff!
