Hello, my friend, an office manager, asked me to make cupcakes to be their Christmas giveaways for their employees. I basically follow the Hershey's Perfectly Chocolate Cake recipe, and make my own rolled fondant to decorate. Just so you know, I do not frost the cupcakes. I place the decorated fondant directly on the cupcake.
She wants 70 boxes of cupcakes (9 cupcakes in a box) and there's so little I can do with a hand mixer and 49L oven so I really have to make them in advance. She needs the cupcakes on December 23, to be distributed to the employees, and will be eaten by Christmas eve. I am planning to bake the cupcakes as early as Dec 20, decorate and box them on Dec 22. The decorated cupcakes will be wrapped in plastic and slid into a box. No refrigeration will be done.
Do you think my timeline will work in a hot and humid weather? Of course, the cupcakes will have to be moist by the time it is eaten.
