AIt depends on the recipe you are using for the ganache, but my understanding is that a standard ganache (2:1 or 3:1 ratio) does not need to be refridgerated.

when you refrigerate the ganache does the taste will be easily affected?. what is the significance of the ratio? ( I'm a newbie in baking ),
The ratios depend on the consistency you are going for. So 3 parts chocolate to 1 part cream will be thicker than the 2 to 1 ratio. :)
The refrigerator shouldn't affect the taste as long as you don't leave your cake in there for days with garlic and onions sitting in there without being wrapped up. Eventually that taste will be in your baked goods.
