What I do is make chocolate SMBC for the outside, and just use the coconut pecan mix as filling.  I make a dam with the buttercream, then fill.  I use the filling on top with a border around it to keep it in.  I've never seen a German chocolate look decent with the gooey stuff as frosting. The layers can be soft too, so I chill them before trying to work with them.

Are you icing the cake with butter cream?     German chocolate icing is it's own recipe and that's all you use.
