have you ever tried this new (new to me anyhow) 'sugar' in your coffee or in your baking?

i've finally accustomed myself to truvia for baking and from that i was able to transition to stevia for coffee--but i'm gonna try this too.

I haven't tried it, but if it is zero calorie, I have a feeling I won't like it.  :(

 

The only thing I like with artificial sugar in it is fountain Diet Coke.  I think it has a combination of aspartame and saccharin that I am sadly addicted to.

 

Have you had to change your recipes to use Truvia?  Does it react different chemically in baking than cane sugar?

 

The biggest trend here is agave nectar, which is essentially corn syrup from cactus instead of corn.  But that isn't calorie free - just a health trend.

ALuo han guo tends to have off flavors that don't work well if you need a neutral flavor profile. P&G has a patent on a method for removing these off flavors, so you'll want to look for either a P&G product or a company that has licensed this patent, such as: http://www.biovittoria.com/fruit-sweetness

I've seen Nectresse in stores but I try to avoid 'artificial' products where possible. Except when it comes to diet coke, they could make that with arsenic and I'd still drink it. (Incidentally, when I was in Sweden they use something else to sweeten the diet coke, I can't remember what).

Same here Kiki!  Damn that Diet Coke!  Until we got a Sonic, I used to get mine at McDonalds, where they use a higher concentration of syrup in their fountain mix so it still tastes good as the ice dilutes it.  I like Sonic now, and am not sure if they do the same thing.

I use Monk's fruit sweetner in beverages, oatmeal, etc.  Like it.

Yes! The stuff in cans and bottles is just not the same. My husband thinks I am crazy. Diet soda gives me a sore throat though, especially if I get it at Tim Hortons, so I hardly ever drink it anymore.

i haven't used the monk fruit in the raw yet--i'm going to do some testing this week though--i'll definitely report back--

 

no the truvia recipes do not come out like sugar ones- it's a different world of baking for sure--

 

while i like agave it's still the wrong kind of sweetener for me personally---- they say it's kinder & gentler to your glycemic index than sugar & honey --

 

but i mean truvia and stevia are definitely acquired tastes----you really gotta want to do this -- i can't/don't go back & forth between sugar and the '-vias' for sure--however the truvia helped me bridge onto the stevia--

 

me some diet coke! <high five>

thank you , jason! i was hoping you would impart some of your wisdom on this subject--the stuff i bought has dextrose for the first ingredient then the monk fruit extract so it's not all or even mostly  luo han guo--maybe it will be more palatable?--hey if i can eat stevia i should be able to choke this down--this is made not by p&g but by cumberland packing corp--that sounds odd that it is a product of a packing corp huh--

let me chat with you a minute-first the back story--i got deathly sick once from pink ice--so now i am an honorary 'ice chute spotter'--if you check the ice chutes where you can self serve your fountain drinks--you will often find black mold--just saying--there's neglect there--alll it needs is to be properly soaked overnight like they should be soaking the fountain drink spouts--then in particular the diet coke spouts go bad first--so just saying--watch out for that--i go with cans & bottles for that reason--

and even when you follow up on your ice chutes--where you got a manager and freaking TOLD them -- and it's still icky the next week--wow--

then i found this crazy stuff-- 'coconut sugar' -- who knew?

 

y'know what's really funny though--previously as in 10-20 years ago--coconut oil that they used especially to pop (the most fragrant and delicious) popcorn 'they' said was going to doom the health of the inhabitants of the plane,t stunt our children's growth and wipe out mankind (perhaps i exaggerated a bit--but they were very serious about it)  --coconut oil--now it's the great savior of the same previously doomed planet--not to mention coconut flour and milk and cream and coconut--

ACoconut sugar is an interesting product but unfortunately it is not sustainable...coconut palms cannot produce coconut sugar and coconuts at the same time, and if you switch back and forth yields are much lower. Once these long-term effects are realized it is likely that the supply of coconut sugar will dry up and prices will skyrocket.

It may not be the ice. My dh and I both used to work for one of the beverage companies.  He was the lucky one who got to keep the equipment in the area working properly - as a result, neither of us will ever touch a fountain drink again.  He used to bring things home to show to me - GAG!! The only places where the valves were cleaned as they should be were the hospital and the Air Force Base, and how likely are we to be getting a fountain drink there?

 

My advice?  Take a napkin, fold it to a point and run it around the valve where the soda comes out before you get a drink.  If it's black (or green and furry), DO NOT use it - go get a can or a bottle.  And keep in mind that from the moment diet soda is produced and the BIB (Bag In a Box) is filled, there's only a 90-day shelf life.  There are a lot of restaurants out there that pay no attention to the dates and will use one until it's gone.

AI use coconut sugar in a couple recipes at work. Not much. It kind of smells funny, but then again, a LOT of what I work with smells funny. Ugh! Garbanzo and white bean flour?! Forget about it.

Yes!!  My brother has been popping his popcorn in coconut oil recently because it is "healthier" than all the GMO veg oils out there . . . same thing I thought . . . isn't coconut oil what movie theaters popped their popcorn with that caused all the health nuts great outrage just a few short years ago???  I guess if you aren't old enough, you don't see all these fads cycle in and out.

The studies that showed coconut oil was unhealthy focused on hydrogenated coconut oil products, you want to look for coconut oil without trans fats. Non-hydrogenated coconut oil is not really healthier than other types of oil but in moderation it should be fine.

jgifford-- good call there on the napkin up the spout--but  my particular issue was from raunchy ice--i had put it in a cup of coffee at the end of a loong shift and it was a long time ago too--so no fountain drinks were involved in that fiasco--but yeah--the' ice chute spotting' if it's moldy--that is a big clue that you'll likely find the drink spouts to be nasty--and it is clearly visible on the ice chute so...yeah a napkin corner in the spigot is a great idea- i mean sometimes they don't even respond to the nasty ice chute thing.
 
jason, i haven't tried the coconut sugar yet--too bad it's a little doomed from the get go-- and yes i thought they probably changed the coconut oil up a bit nowadays but previously 'they' made it sound like we were all gonna pop burn in hades y'know? ;)
 
iampamcakes--do you make those flours or buy them?
 
liz--ain't it crazy? one day it's the curse the next day it's the blessing--i could literally float on the smell alone of coconut oil popped popcorn--omg!

AK8 - we buy them. The only ingredients we make are vegan butter and rice milk. Everything else is ordered.

AI'm pretty particular about where I get my fountain soda from. I worked at McDonalds once upon a time and I know the kinds of procedures they're required to follow so I generally trust a McDs fountain. It's the only place I'll get soft-serve ice cream too.

My soda preference list is really sad - it goes fountain, large bottle, glass bottle, can, small bottle.

My Heineken preference list is tap, green bottle, can, brown bottle. Yep.

That is funny, Kiki!  I have the same kind of list, along with sizes, for correct ice to soda ratio, taking seasonal weather in account (how fast will the ice melt, etc.).  I really don't have OCD, but it sounds like I may have issues . . .

reporting back regarding 'coconut sugar' and bear in mind the ingredients listed on the bag are dextrose and coconut sugar--so obviously it's mostly dextrose--they probably wave a coconut over a big vat of dextrose--who knows?

 

i made cheesecake minis with it--they taste awesome--they come out a little tan in color--not as white as cheesecake is usually but for me it's no problem and zero calories. win/win
