Can Anyone Tell Me Where I Possibly Went Wrong?

Yesterday I attempted to make an order of Red Velvet Cupcakes using a recipe I have used for years and never had problems with but for some reason they are came out with a really bland taste and a pointed top. After this happened the first time, I tried it again because I was also preparing to make 2 dozen carrot cake cupcakes so I thought I might have forgot to add the sugar but it ended up coming out the same way; bland and floury tasting. I checked all of the ingredients and can't seem to figure out what the problem is. I thought it could be the buttermilk but I used the same buttermilk in the carrot cake order and they came out fine. 

 

Here is the recipe:

 

2 1/2 c cake flour

1 1/2 c sugar

1 tsp baking soda

1 tbsp cocoa powder

1 tsp salt

2 eggs

1 1/2 c veg oil

1 c buttermilk

2 tbsp red food coloring

1 tsp vanilla

1 tsp white distilled vinegar

 

Simply put, I sift all the dry ingredients in a bowl and mix all the wet ingredients in a bowl then beat the dry into the wet. 

 

Any suggestions would be appreciated. Thanks

seems like a lot of oil to me--

 

then again some cake recipes do not translate well to cupcake and vice versa

My red velvet cupcake recipe has 1 1/2 cups of butter but to 3 1/2 cups of flour so as K8 said - it looks like it might be too much oil?

Mine is similar to yours but no oil. I've only made mine as cake though and not cupcakes

Thank you for the tip on using the reviews, it appears that most of them are about experiences with the amount of oil used in the recipe; when I first started using this recipe I thought it was an unusual amount but went with it and it turned out fine and I've used it a many times since then. I think I just need to use all fresh ingredients because something is not doing what its supposed too but I can't figure out what it is.

Just a quick update to everyone... I tried the recipe again using all new ingredients and it came it perfect this time so something must have been off with the supplies. Thanks to everyone the took the time to view the question and especially to those that responded.
