Hello to this forum!

I just bought a heap of Callebaut milk chocolate really cheap, only $34 for 10 LB. I have seen some of the most beautiful fondant icing cakes on this website but, not many made with chocolate. Does anybody know how to make fondant icing using milk chocolate so that I can create a flavorful chocolate iced cake that is also elegantly done?

Hi yumtum. I'm fairly new here but people have been so helpful to me that I thought I'd pass what little knowledge I have on. I've not heard of fondant made from chocolate, but you can make modelling chocolate that you can use like fondant to make decorations or even cover a cake. You can also mix it modelling chocolate with fondant.

I made my first batch of white modelling chocolate this week using this recipe. http://www.wickedgoodies.net/modeling-chocolate-recipe/ with extra help from here http://www.hungryhappenings.com/p/chocolate-making-tips.html.

It tastes delicious and has been really fun working with it.

Hope that helps.
