Why is it that when you're merrily making a cake for 'teh lolz' it swings along peachy as a dream, but the moment you apply any sort of deadline it all goes to hell in a hand basket?

 

Currently I'm staring at a HUGE pile of wasted cake where not one, but TWO layers of the 10in square three layer birthday cake I have to finish for this evening decided they were going to explode coming out of the cake pan last night (throwing my schedule massively off-kilter!)

 

I'm not really sure what happened! I was going to try again last night but by the time the second one fell apart (which had been my, 'ah well, lets just make another!' rescue) I was in such a fit of frustration I knew I had to have to some sleep else I'd end up throwing the whole thing away.

 

It's a nice simple recipe, a basic white chocolate sponge and the first two layers came out lovely (albeit one missing a tiny bit of corner that was easily trimmed away). The last layer (or I should say, the last two layer ATTEMPTS) pretty much fell apart coming out of the tin, sticking horribly as they did!

 

I'm trying again this morning. Only this time I'm doing two things I've not done so far:

 

1. Putting greaseproof in the bottom

2. Lining the sides with Trex and flour (instead of the grease I WAS using).

 

I just hope to God I can make it work this time X.X 

 

I just can't believe the same recipe, same method, same pan would back-fire so horribly for no apparent reason!

you mean greaseproof paper? that should help a lot--

 

yes deadlines add quite a thrill to the deal huh?
