Hollow cupcake bottoms

Hi! So I've been baking cakes and cupcakes with the recipe "Hershey's Perfectly Chocolate Cake". Though they taste really good, I am having trouble with the shape of cupcakes. I get hollow parts (holes?) at the bottom and sides. Here's a photo:



Some cupcakes have bottoms that look fine, like the one on the right side. But most of them are deformed, which is bad because i sell my cupcakes. What do you think may be causing this shape? Could it be the foil liner that I use? The inside of it is paper but it can't be separated from the foil. I choose foil over paper liners because they hold moist cupcakes better.

The cupcakes did rise but leave hollow bottoms.

I use that recipe almost weekly and don't have that problem with my cupcakes. Try using the paper liners, but get a good quality glassine liner. If you don't bake too far ahead, you shouldn't have any problems with dry cupcakes. 

 

I know everyone's oven is different, but I bake mine for 22 minutes at 350 and take them out of the pan immediately! I don't let them cool in the pan so they don't keep baking! I have developed Teflon fingers over the years. 

 

I have a feeling your problem is the foil liners. If you keep having problems with it, it might be your leavening agents. Check the expiration dates on your baking soda and baking powder.

Hi! I changed into paper liners and they look better now. Thanks so much for the suggestion. :)

Glad I could help! I am not a fan of foil liners. I always have problems with them! Some people swear by them! Not me!!

It depends on the liner for me.  I have never had a problem with Reynold's.
